The term apericena is a neologism for an aperitif that replaces a dinner because it is accompanied by various and numerous snacks and savoury specialities.
Unlike the apericena, a rather recent social phenomenon, the aperitif has very ancient roots.
The word derives from the Latin: aperitivus (opening) and identifies a drink capable of stimulating, hence 'opening' the sense of hunger.
Its origin can be traced back to an anecdote concerning a discovery made by Hippocrates in the 5th century. The Greek physician identified a bitter-tasting drink made from white wine, dittamo flowers, wormwood and rue which, when administered to the patient, was able to remedy the complaints of lack of appetite.
This recipe was passed down through the centuries until it reached medieval herbalists, who discovered that the sense of hunger was stimulated by that very combination of ingredients.

Vermouth is the aperitif drink par excellence, invented in 1876 in Turin by Antonio Benedetto Carpano.
In his small liquor shop, he made a wine flavoured with cinchona that quickly became one of the favourite drinks of the King of Italy Vittorio Emanuele II.
